Wet vs. Dry Scallops:
You can typically find two different varieties of scallops at your grocery store. Wet scallops and dry scallops. Wet scallops are shucked on the boat, put in a wet solution to preserve them, and typically frozen. It is hard to get a good sear on wet scallops. Dry scallops are shucked on the boat, and put onto ice to transport. They are more translucent than wet scallops, have better flavor, and most importantly, they sear better because they don’t soak up any additional water weight.
Cooking Scallops Tip:
Be sure not to overcrowd your pan as you cook scallops. If needed, you can always cook your scallops in batches.
